Madam Fausty continues to cook a variety of dishes for the family. She made a dish called Tuozaafi (two-oh-zah-fee), where she heats ground nut paste to let the oil rise to the top, then adds onions, a leafy vegetable that has been pre-cooked and looks like spinach. This simmers for a while and then is eaten with Ken-Kay, a mix of yam and corn meal. The aroma’s from her cooking and the small cooking pot make me want to have her do a cooking show from Ghana.
Today was a great day for Joey and Kate. Kate continued teaching in a variety of classrooms and Joey empowered the girls through his encouragement of their involvement in using the tools, sanding, hammering, and varnishing. If it takes a village, the village is enhanced by the contributions of Joey and Kate. Their devotion and dedication to the children and their education is wonderful to watch.
